Soups are great option for the cold winter days or they can be part of any family lunch composed of healthy and fresh dishes. This recipe will surely be one of your favorites and will surely bring back some old memories from your grandma’s soup that you enjoyed when you were a child. The next soup is the roasted carrots soup. You will need 1 bag (1 pound) of carrots and half a pound of parsnips. You will also need one onion, olive oil, salt and pepper (and a baguette bread). Cut the carrots and the parsnips into rounds and place them in a large pan, and add 3 tbsp of olive oil and a bit of salt and pepper. Roast the vegetables for 45 minutes stirring occasionally until the vegetables are soft and golden. While the oven is still hot, place the slices of baguette in a pan and sprinkle over with olive oil (you can also add garlic powder). Bake them for 10-15 minutes. Place the vegetables in a blender and mix until the mixture is smooth. Place a pot on a heat, add one tablespoon of butter and pour the content of the blender. Serve hot and place one of two slices of olive oil bread in each bowl.

Vegetarian recipes- main dishes

Now, we will give you few vegetarian recipes for main dishes. They are tasty, simple, healthy and will surprise you with their Italian twist and charm. The first recipe is called polenta pizza. You will need polenta, grated Parmesan cheese, sun-dried tomatoes (half a cup), mozzarella cheese, olive oil, salt and pepper. Heat water (2.5 cups) in a larger saucepan until it starts boiling, and then pour in the polenta. The polenta should be ready in 5 minutes (do not forget to lower the heat and stir constantly). Add the parmesan, salt and pepper. In another pan, add one tbsp of butter and spread evenly. Spread the polenta all over the buttered pan in the form of pizza (spread the polenta on the sides of the pan). Mix the tomatoes and the mozzarella cheese adding olive oil, salt and pepper. Place the mixture over the polenta and spread evenly. The polenta pizza goes in the oven for 20 minutes or until the edges are golden.

What can be more vegetarian than a tasty and simple salad? Our vegetarian recipes menu would not be complete without a simple and delicious salad. The following salad is rich in magnesium, iron and proteins. You will need 2 apples cut in dices, lemon juice, spinach, olive oil, honey, vinegar, walnuts and cheese (grilled or toasted). In a large bowl, add the apple dices, lemon juice and mix. Add the chopped spinach. In a separate bowl, mix lemon juice, vinegar, oil and salt and pepper. Sprinkle the salad with the dressing. Add the walnuts and the cheese and you are done.
